Italian Salad

DISH: First courses
TIME: 45 minutes

INGREDIENTS: (for 5 people)

  • 300g spelt
  • 1 stalk of celery
  • 15 cherry tomatoes
  • Basil
  • 100g string beans
  • 40g chives
  • Extra-virgin olive oil
  • Salt
  • CHEESE CRISPS Classico


Wash and drain the spelt; let 1 l of water boil, salt it and put the spelt in. Let it simmer for around 20 minutes. Slice tomatoes and cube the stalk of celery and chives; trim string beans and sear them: just a few minutes as they have to keep crunchy.

At the end of cooking time, drain the spelt, put it under cold running water, pour it to the vegetables and mix all the ingredients. Add chives, extra-virgin olive oil and CHEESE CRISPS.

Garnish with basil.
