Cherry tomatoes stuffed with green sauce and capers

DISH: Starters


TIME:  20 Minutes

INGREDIENTS: (for 4 people)

  • 20 cherry tomatoes
  • 1 sprig of new parsley
  • A little basil
  • 20 caper flowers
  • Extra-virgin olive oil
  • Salt


With a saw-toothed knife, cut off the two ends of the tomatoes to stop them from rolling. Then cut the tomatoes in half and remove seeds. Slightly salt them inside and leave them face down on the chopping board or kitchen roll to drain excess liquid.

In the meantime use a blender to mix parsley (after having properly washed and dried it), basil, salt and oil, for the green sauce. Fill the tomatoes with the green sauce and decorate with the caper flowers cut in half length-wise. Lay each tomato on a CHEESE CRISPS and sprinkle with crumbs of CHEESE CRISPS.
